The World of Muses:
Restaurant in La Défense
In this business district, characterised by its strong vertical lines and striking architecture, Muses has been designed as a softly shaped cocoon, providing a refined and comfortable venue that is unique within the CNIT in offering gourmet bistronomic cuisine.
Combining the bright, colourful lines and design features of the sixties with the luxuriance of a tropical garden, its new décor lends the restaurant a warm and vibrant feel that transforms any meal or moment spent here into a truly unforgettable experience.
A choice of moods
Guests at Muses can choose from a range of seating arrangements, be it cosily ensconced around a table on comfortable chairs and banquettes, or casually perched on a bar stool for after work drinks.
The large dining room is divided into different areas to create a sense of privacy and to cater to all needs, including business meetings, group meals, cocktails with friends, as well as altogether more intimate gatherings.
The ambience varies throughout the day, in line with the flow of customers, with lunchtime offering a fast and vibrant pace and the evening a more festive, animated feel.
That French je ne sais quoi
in refined bistronomy
Bringing the restaurant to life with his creativity, Chef Jérôme Salandre has devised a gourmet menu that showcases the quality of the produce, its local origins and seasonal freshness.
And his guiding mantra of “Do it well, do it beautifully” speaks for itself. Brought up on the fruit and vegetables of his parents' garden, in a family where togetherness was paramount, particularly at meal times, Chef Salandre strives to bring these same values to life in the recipes he creates for lunch and dinner.
As a consummate professional who is passionate about his job, he carefully oversees the work of his team to ensure that the excellent service and high quality, for which the Hilton brand is renowned, are continuously maintained.
Mixology and oenology take centre stage
Muses is home to a mixology station for aperitifs and after work drinks, offering a delightfully subtle blend of flavours.
On the menu, are a wide range of signature cocktails inspired by the restaurant's Muses themselves, several varieties of spritzes and, for fans of soft drinks, original and fragrant mocktails, alongside smoothies and refreshing juices.
As for the wines, 95% of them come from France's great wine-growing regions, and over thirty fine vintages can be enjoyed by the glass.
With our Muses in mind, the wine list also gives pride of place to women winemakers!
Pastry chef Nina Métayer,
a modern-day Muse
To create the dessert menu for Muses, the Hilton Paris La Défense called on talented young chef Nina Métayer, who won the impressive title Pastry Chef of the Year two years in a row before the tender age of 30, and the first woman to be crowned 2023 World’s pastry chef.
Born into a family that instilled in her a taste for the finer things in life, her training took her from La Rochelle to Australia, before she specialised in pastry-making at the prestigious Ferrandi School of Culinary Arts, where she graduated top of her class.
She began her career in the Parisian luxury hotel industry and worked alongside some of France's greatest chefs before striking out on her own with a multitude of delectable creations to illustrate her vision of taste as "a vehicle for emotion, pleasure and togetherness".
